Broadly speaking, lutein refers to the lutein class of carotenoids (xanthophy II carotenoids), which includes lutein and its isomers, zeaxanthin and meso-zeaxanthin. Lutein was first isolated from carrots in 1831 by the German chemist H.W.F. Wackenroder and named carotene. Later, in 1868, the Austrian chemist Adolf Lieben isolated lutein from the luteum of air-dried cow's ovaries and named it "lutein". 1912, Swiss chemist Richard Willstätter and his assistant Walter Mieg. In 1912, the Swiss chemist Richard Willstätter and his assistant Walter Mieg isolated a single crystal of lutein from egg yolk and determined its exact molecular formula for the first time, a discovery that laid the foundation for the study of lutein. Research into the chemical extraction and application of lutein also progressed. Nutrivitas®Lutein is widely used as a food colouring due to its bright yellow colour and good stability, suitable for use in a variety of food processing environments. These include prepared milks, frozen drinks, jams, confectionery, convenience rice and noodle products, baked goods, beverages, jellies, etc. Nutrivitas®Lutein is added to foods to improve their nutritional value, particularly in terms of vision protection and antioxidants. Nutrivitas®Lutein is the main carotenoid in the macula of the retina, which can filter some of the blue light entering the retina of the human eye, effectively reducing visual damage, while inhibiting the activity of oxygen free radicals and preventing oxygen free radical damage to visual cells. Specifically, it inhibits the activity of peroxisome proliferator-activated receptor-γ (PPARγ), a transcription factor responsible for adipocyte activation, which can downregulate the expression of inflammatory factors such as TNF-α, LP and interleukin-6 (IL-6) and induce the expression of adiponectin, which can then regulate insulin sensitivity, intervene in adipocyte differentiation and play a role in lipid reduction.

Nutrivitas®Lutein has good antioxidant capacity and can effectively inhibit oxidative stress in the atherosclerotic process, thereby reducing the inflammatory response and reducing oxidative damage to tissue cells. High levels of lutein in the blood and fat have been associated with a reduced risk of cardiovascular disease.

■ Structural properties

Nutrivitas®Lutein is a long chain of 40 carbon atoms with alternating single and double bonds on the main chain, forming a polyene chain with nine conjugated double bonds and modified by four methyl groups. Nutrivitas®Lutein has a chromophore in its molecular structure, with a unique absorption peak in the UV-visible region, giving its solution a brilliant yellow colour under visible light. In the human body, lutein is mainly found in cell membranes or lipophilic tissues (such as adipose tissue). The highly unsaturated nature of its molecular structure makes free lutein extremely unstable to light, heat and oxygen, which readily promote lutein degradation.

In addition, lutein has light-absorbing properties, where a conjugated polyene chain of carotenoids have light-absorbing properties, can be filtered by absorbing high energy blue light (400-460 nm), and can make other wavelengths of light through lutein's maximum absorption peak of 445 nm.
