Insoluble soy fiber is not easily digested or absorbed in the gut. It absorbs water, increases stool volume, stimulates intestinal wall contractions, and accelerates stool expulsion. This effectively prevents and alleviates constipation. Soluble soy fiber serves as food for gut probiotics, such as bifidobacteria and lactobacilli. It promotes their proliferation, inhibits the growth of harmful bacteria, helps maintain gut microecological balance, enhances gut barrier function, and reduces the risk of gut infections.

Soybean residue is the primary and most economical source of soybean fiber. Large quantities of this residue are produced during the manufacturing of soy milk, tofu, soy protein isolate, and other soy-based products. In the past, this residue was often used as feed or discarded. However, advanced technology now allows it to be processed into valuable dietary fiber products. The outer seed coat of soybeans is rich in cellulose and can be separated and processed directly. Sometimes, total dietary fiber is extracted directly from whole soybeans.

■ Structural Characteristics

NutuFibraz®Soybean fiber is a complex mixture of both soluble and insoluble dietary fiber. Insoluble fiber includes cellulose, which forms the structural framework of cell walls and provides structure and bulk. Some hemicellulose binds to cellulose, which enhances the fiber's rigidity and water-holding capacity. Lignin, which is primarily found in seed coats and older fibers, contributes to hardness; its content is typically lower in food-grade, refined fibers. Soluble dietary fiber includes pectin-like substances, such as galacturonic acid polysaccharides, which have strong hydrophilic properties and gel-forming capabilities. Some hemicelluloses, such as arabinogalactans, have viscous properties and can be fermented by intestinal microbiota. Resistant oligosaccharides, such as raffinose and stachyose (which are also classified as prebiotics), are present. Small amounts of resistant starch are present in processed soy products.

Soluble soy fiber can bind to bile acids and promote their excretion from the body. In order to replenish the lost bile acids, the liver uses cholesterol from the blood to synthesize new bile acids. This process reduces cholesterol levels in the blood, lowers low-density lipoprotein (LDL) levels, and prevents atherosclerosis. It can also inhibit fat absorption, helping control lipid levels and reduce the risk of cardiovascular disease.

The soybean fiber production process involves extracting and refining dietary fiber from soybean processing byproducts, such as soybean residue and soybean meal. The goal of this process is to remove impurities, such as protein, fat, and starch, while retaining and enriching effective components, such as cellulose and hemicellulose. NutuFibraz®Soybean fiber uses soybean meal (a byproduct of tofu and soy milk production) or low-temperature de-solventized soybean meal as its primary raw material. These materials have a high dietary fiber content and relatively easy-to-remove impurities, such as protein and fat. Mechanical impurities, such as sand and debris, are removed from the raw materials. Then, they are rinsed with clean water until no visible impurities remain to reduce contamination during subsequent processing. The raw materials are crushed into small pieces using a crusher. If the materials are dry and hard, water is added to soften them and facilitate subsequent processing. Depending on the method used to remove impurities, the process can be categorized as alkaline treatment, enzymatic hydrolysis, membrane separation, fermentation, or composite processes. In actual production, these methods are often combined to improve efficiency.

Once soy dietary fiber enters the gastrointestinal tract, it absorbs water and expands. This creates a strong feeling of fullness and reduces the intake of other foods. This helps control total calorie intake, playing a supporting role in weight management and weight loss.
